These salted caramel brownie bites are my most popular recipe for a reason. The dates give the caramel vibes and the chocolate peanut butter shell makes the whole snacking experience feel decadent. These are a great make-ahead snack for when you’re craving something chocolate that also provides various nutrients from the almonds, dates, and even the cocoa powder. Feel free to swap out the peanut butter for sunflower butter or almond butter. You can also leave out the mini chocolate chips if you’d like. I hope you love these as much as I do!

Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/3 cup maple syrup
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon pink or sea salt, plus more for sprinkling on top
  • 1/3 cup chopped dates
  • 1/4 cup mini chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup peanut butter

Steps

Add almond flour, cocoa powder, maple syrup, vanilla and salt to a medium mixing bowl. Mix until a dough forms. Stir in chopped dates and mini chips.

Roll into balls (about 2 tablespoons per ball) and place on a parchment lined plate or baking sheet. Transfer to the freezer for 10 minutes or so.

Place peanut butter and chocolate chips in a small microwave safe bowl. Microwave in 30 second intervals, stirring in between, until smooth and creamy.

Remove balls from the freezer. Gently roll in peanut butter chocolate bath and return to parchment-lined plate.

Immediately top with more pink or sea salt. Let harden at room temperature or return to the freezer for 20 minutes or so. Enjoy!! **Store any leftovers covered in the refrigerator.
